Seville Orange Marmalade


Part of our training as novices working in the jelly kitchen includes being able to distinguish between the Seville and the Sweet Orange Marmalades. Seville oranges are bitter and so produce a complex flavor when combined with the sweetness of the preserves. The shred of the peel is also finer. This monk prefers the Seville to the Sweet Orange, but you’ll have to compare them for yourself.
