One of our principles in creating recipes is to use the best fruit we can find. For our blackberry preserves, this means exclusively using a variety of blackberry called marionberry. Marionberries are called the “cabernet of blackberries” because of the complexity of flavor: tart and earthy. It’s beautiful to see them in the kettle turn a deep, dark purple color. Because these blackberries are too soft to ship, jams are one of the few ways to enjoy them.
