People sometimes imagine that our making our jelly is mystical process: hooded monks chanting away in the dark of the night wave their hands and jars appear. That makes a great story, but the true one is even better. Making preserves is hard work, but it is done with care and attention. This is especially true of our Apricot Preserves. One of the monks comes to work two hours early to sort through the apricots by hand to make sure there are no pits.
Visiting the monks of Westvleteren in Belgium, we asked them about the secret of their world-famous beer, and immediately the brewer said that they make it, “met liefde” -with love. That’s the same way we make our preserves -so in the end perhaps it is a mystical process.
