One of the monks has a brother who is a wine-maker and when this brother has Trappist Preserves, the flavors he chooses are the flavors found in his wines: blackberry, red currant and damson plum. In tasting the Port Wine Jelly you can do the same thing in reverse and find the fruit in the wine.
